The starndart in China are as follows
Small 180--200 pcs/kg
Standard 145--155 pcs/KG
Large 120--140 pcs/KG
Extra Large 100--120 pcs/KG
Special 80 --100 pcs/KG

the size ove large in China is for cook, and small/standard is for roast.

I believe having an unbaised person (USDA) setting the standard would be the best. At the moment the coop that I belong to uses 1" to 1 1/8" for Mediums and 1 1/8" to 1 1/4 for Large. I noticed that other growers are calling these sizes Large and Extra-Large.
Our chestnuts are being compared to the Italian chestnuts and what they are calling Extra-Large is our Large.
Our coop sells to large store chains and we are having to take a lower price simply because of what we are calling the size.
